Ripe picked peaches are extremely perishable and deserve special attention when it comes to care. Our peaches are not like those that you might find at the grocery store. Grocery store peaches are picked much greener so they can be machine sorted and processed in a packing shed. Our peaches should arrive in your hands at varying degrees of ripeness. In a typical box, a few will be very ripe and will be partially bruised from the journey. These are probably the best peaches in the box and should be consumed immediately either over a sink or outside to avoid the sticky mess resulting from the juiciness. The varying degree of ripeness of our peaches leads us to recommend a few simple measures to ensure that your peaches satisfy you as much as possible:

1) Sort Your Peaches and Remove the Foam Divider
When you first get your box of peaches sort them as soon as possible to remove the ripest ones. This is a simple process. Remove the lid and survey the top layer for peaches that are bruising. Remove them to a convenient place for expedient consumption. Gently feel the rest of the top layer for other soft peaches immediately ready to eat. Seperate the ones that are immediately ready to eat from those that are firmer on the top layer. Remove the foam seperation between the top and bottom layer.
Repeat the above actions with the second layer and then replace all of the firmer peaches back in the box. Depending on the degree and speed of ripening desired, refrigeration is necessary for all of the peaches.

The most important thing to do is remove the ripest peaches and the foam divider.

2) Refrigerate your Peaches
Please refrigerate your fruit as soon as possible if you choose not to sort them! This is the best defense for spoilage. The most common cause of fruit complaints results from people failing to quickly refrigerate the fruit. If you do choose to sort (highly recommended), then quickly refrigerate those you do not immediately intend to eat or that you want to leave out to ripen.

Care in a Nutshell: Open the box and sort out the ripes from the top layer, remove the foam divider between the top and bottom layer in the box, sort the bottom layer, then refrigerate.

The two most important things for care are to remove the foam divider and then refrigerate. The most important thing is to ENJOY!
